Potatoes Goodness Unearthed and Potato Recipe Contest

Did you know that potatoes are a healthy food?  A medium size potato is rather low in calories, only 110 calories and is absolutely fat free.  The potato also provides 45% of your daily value of vitamin C and if you eat the skin, it's has more potassium than a banana.  With all that potassium in potatoes, you will be doing your heart a favor.  Potassium has been shown to help reduce the risk of high blood Pressure.  Potatoes also contain essential vitamins and minerals, fiber and antioxidants.  That is so great to hear that the potato is actually healthy for you!  There are so many tasty recipes out there for potatoes, from soups, side dishes to appetizers.  The potato is a family favorite vegetable for many of our family meals!


For this contest I received a coloring book, along with a potato prize pack that included a pair of potato scrubbing gloves, potato masher, potato shopping list notepad and potato recipe booklet.  For the entry of the contest I must make a potato recipe from the coloring book, so I decided to make the Ashley's Favorite Russet Potato Recipe.


Ashley's Favorite Russet Potato Recipe

I made out my shopping list and got all of my ingredients, now it's time to put it all together!  The recipe called for medium size potatoes, but I had already had four large russet potatoes.  I could not find the reduced-fat cheese, so I used fat-free cheddar.


My ingredients for this recipe are:
  • 4 large russet potatoes
  • 1 ½ cups of steamed broccoli
  • 1 cup of fat-free sour cream
  • 1 ½ cups grated, fat-free cheddar
Preheat oven to 450 degrees

Wash the potatoes with the potato scrubbing gloves.  Pierce the potatoes with a fork and microwave for about 23 minutes.  While I was letting the potatoes cool down, I steamed the broccoli in the microwave for 5 minutes.


Next I sliced the potatoes lengthwise and scooped out the potatoes.  I then mashed the potatoes with the potato masher.


After measuring the broccoli, fat-free sour cream and the fat-free cheddar, I poured all of them in with the mashed potatoes and continued to mash them, until it was creamy.  I scooped the mixture back into the 8 potato halves.


Top with the remaining fat-free cheese.  I had all of the potato halves on a foiled lined cookie sheet and baked for 12 minutes.  They were delicious and the family loved them!


I loved how the potato gloves cleaned the potatoes and how well the potato masher worked.  While I was making Ashley's Favorite Russet Potatoes, my granddaughter was just having a blast coloring in Chef Solus' Potato Party Coloring Book!
