Beef Enchiladas

The other day I decided to make some Beef Enchiladas and I thought I would share the recipe that I came up with, after looking at a lot of different recipes.  I made up two 9" x 13" inch pans full of Beef Enchiladas, they were absolutely delicious and I would definitely make them again!  I gave one of the pans of Beef Enchiladas to my step-son and his wife, they work very long hours and I thought I would surprise them with dinner already made.

Here's the 1½ cups of onion and 2 pounds of ground beef frying.  When it's thoroughly cooked, add the can of Red Kidney Beans and Refried Bean, along with the 1 teaspoon of Cumin and 2 teaspoons of Chili Powder.

Here's what the mixture looks like after mixing the onion, ground beef, red kidney beans, refried beans, cumin and chili powder.

Spoon the mixture onto the Tortilla Shell and pour a line of Enchilada Sauce onto the mixture, then add the grated cheese.

Fold up the Tortilla Shell and place in the pan, that has been sprayed, with Pam and has some Enchilada Sauce on the bottom of the pan.

Here's both pans full of Enchiladas, one plan is ready and I just need to add the cheese to the top of the other pan.

Here's some of the ingredients that I used.  I wasn't sure how much Enchilada Sauce that I needed.  I did use both of the 28 ounce cans above and added an extra 19 ounce can of Enchilada Sauce to the recipe. 

Beef Enchiladas

  • 1 - White Onion (1½ Cups of Chopped Onion)
  • 1 - Can of Red Kidney Beans
  • 1 - Can of Refried Beans
  • 2 - 28oz. Cans of Enchilada Sauce
  • 1 - 19oz. Can of Enchilada Sauce
  • 1 - 8 Cup Package of Grated Mexican Style Cheese
  • 2 - Packages of Flour Tortillas
  • 1 - Teaspoon of Cumin
  • 2 - Teaspoons of Chili Powder
  • 2 - Pounds of Ground Beef
Step 1:  Chop the onion and fry it, with the ground beef until thoroughly cooked.

Step 2:  Add in the can of Red Kidney Beans and Refried Beans.

Step 3:  Add the 1 teaspoon of Cumin and the 2 teaspoons of Chili Powder, mix well.

Step 4:  Spoon the mixture onto the tortilla shells and then pour a line of Enchilada Sauce on the mixture.

Step 5:  Add the grated Mexican Style Cheese right on top of the line of Enchilada Sauce and then fold up the tortilla shells.

Step 6:  Spray your 9" x 13" inch pans, with Pam.

Step 7:  Pour in some Enchilada Sauce into your pans, then place your folded tortillas into the pans.  I was able to get six tortillas into each pan.

Step 8:  Pour the remaining Enchilada Sauce on top of the Enchiladas, then put on the grated Mexican Style Cheese on top.

Bake at 350° for 45 minutes and enjoy!  You can also add sour cream, sliced black olives and green onion on top before serving!
