Savory Bites: Meals You Can Make In Your Cupcake Pan Cookbook Review

Do you do a lot of entertaining or do you just love food?  I always like to try something new and different.  Have you ever thought about making delicious food in a cupcake pan?  I have made omelets in cupcake pans.  After they cooled off, I would freezer them.  Anytime we wanted one of the omelets, I would take them out of the freezer and microwaved them, until they were nice and hot.  It was so quick and easy, they are perfect for a quick snack

For this review I received a copy of Savory Bites: Meals You Can Make In Your Cupcake Pan.  I love pick-me-up foods, they are perfect for entertaining!  I was looking through the cookbook, I discovered many delicious recipes.  I decided to try a couple of the recipes.  The first one I made was the Tacos.  The recipe was very easy to follow and they were delicious!  My family really enjoyed them!  Then I decided to try the Penne Pasta Gratins, oh they were really good too!  I plan on making every single recipe in the book.  This is an excellent cookbook, so I would highly recommend it!  The cookbook has so many simple recipes and the portions are perfect!

Here's one of the Tacos before I added any toppings!  I added shredded lettuce, onion and sour cream!  It was delicious! 

Here's the recipe for the Tacos:

Ingredients:
  • Non-Stick Cooking Spray
  • 12 (6-inch) Flour Tortillas
  • 2 Tablespoons, plus 1 teaspoon extra-virgin olive oil
  • 1 Onion, thinly sliced
  • 1 (4.25- ounce) can of mild Chopped green chiles, drained
  • 1 Teaspoon kosher salt
  • 1 Pound lean ground hamburger
  • 1 Package of taco seasoning (1.25 ounce)
  • 1 Can of refried beans (16 ounces)
  • 1 Cup grated sharp  cheddar

Optional:
  • Fresh tomatoes, chopped
  • Fresh romaine lettuce, shredded
  • Canned pinto beans, drained and rinsed
  • Sour Cream
  • Salsa
  • Jalapeños, chopped
 
 Preheat the oven to 350º F
Spray a 12-well classic cupcake pan with non-stick cooking spray.  Line each well with a flour tortilla.  The edges of the tortilla will peek over the top of the pan.

Heat 2 tablespoons of the oil in a medium skillet over medium heat.  Add the onions and cook, stirring occasionally, until golden, about 8 minutes.  Stir in the chiles and salt.  Transfer the onion mixture to a medium bowl.

In the same skillet, heat the remaining 1 teaspoon oil over medium heat.  Add the beef, breaking it up with the back of a wooden spoon, and the taco seasoning; cook until browned and crumbled, about 8 minutes.  Add the refried beans to the meat; turn off the heat, and stir to combine.  Adjust the seasoning, if needed.

Distribute the meat and bean mixture evenly among the wells, then top each with the onion mixture and sprinkles with cheese.  Bake until heated through and the edges of the tortilla are golden, about 25 minutes.  While the tacos bake, fill the wells of an empty cupcake pan with the optional toppings.  Let the tacos cool for 1 minute, then use your hands to lift from the pan using the tortilla wrappers as handles.  Server with the pan of toppings alongside and allow everyone to pick their own toppings.
